Video on embedding YouTube content in Canvas.

If you use the link tool in the Rich Content Editor (RCE) to put a YouTube video in a Canvas page or assignment, it will open the YouTube app on the iPad. Using either of the two methods in this video, will keep the student in the Canvas app.
